The milk is sustainably sourced from the Barr Family at Tannybrake Farm.

Their pedigree dairy Shorthorn herd is the only known dairy Shorthorn herd in Northern Ireland.

Established in 2021, The Milk Parlour is a gelato ice cream factory making Italian style gelato from traditional Shorthorn Herd milk.
